Greetings. In the adventure of introducing and supporting alternative grain agriculture in Southeastern Ohio, I am now in the
processing infrastructure research phase, and I keep hearing that both
buckwheat and spelt require a special de-hulling process that is
somehow more complicated than other grains and pseudo-cereals.
However,
I am having a hard time investigating that.
Can anyone tell me if it's true that these crops need special equipment and processes that
are different from a standard de-huller? If so, can anyone describe or
point me to a resource that can describe this equipment and process?

Spelt and Buckwheat
Brandon, OARDC staff have grown and harvested spelt and buckwheat. You should have a conversation with Deb Stinner of OFFER especially about spelts and processing. She had been working with individuals on producing products with spelt flour. Rich Pratt planted buckwheat and harvested it this past year.
I know that there is a milling lab in the wheat lab at OARDC. It is an USDA/ARS and OARDC project. They might have some insight and assistance with your project.
